"Coming from old vines, with very low yields and a long and thoughtful aging, the wines of Domaine Sérafin, unfiltered, are both powerful, subtle, and superb in evolution. The style is defined by a completely destemmed harvest, controlled pigeages, and extractions. Long aging in barrels contributes to the aromatic universe of the cuvées, but never imposes itself." Viticulture is conventional, treatments are limited to the strict minimum, and the harvests are manual.
Tasting
Les Baudes is a very beautiful Chambolle-Musigny, powerful and aromatic. It is located just below Bonnes-Mares. That speaks to the quality of this parcel.
Food and wine pairings
Braised duck with peas, veal shank with small vegetables, roasted stuffed goose, lobster in red wine, partridges, sweetbreads with morels, roasted quail, duck fillets, beef bourguignon, roasted woodcock, stew, lobster with coral sauce, spring veal chop, royal hare, matured rib of beef.

"We only recently discovered the wines of this remarkable small estate, and they left us with a very great impression. Their generosity of fruit indicates grapes harvested at very high maturity, their integration of wood is astonishing, their length is sumptuous." This small estate of six hectares cultivated in organic farming extends over Gevrey-Chambertin, Chambolle-Musigny, and Morey-Saint-Denis. The wines, with rich and mature fruit and perfectly integrated aging, are particularly appreciated by critics and reference guides, despite the estate's great discretion. Thus, the estate's references can be found at Bristol or Taillevent, yet its name means nothing to many enthusiasts! Without succession, and close to retirement, these may be the last vintages of a brilliant Burgundy estate.

Christian Sérafin succeeded his father in 1988 at the helm of Domaine Sérafin. However, he had been working alongside him since the late 1950s.
