Tasting
On the nose, aromas of violet, cherry, blackberry, licorice emerge. On the palate, spices and notes of black fruit jam flatter the taste buds of discerning tasters. There is agreat concentration with nonetheless silky tannins. Very long on the palate.

Aging: Occurs 3 months in tank then 1 year in barrels of 2 to 8 years (No new barrels, to respect the aromas of the terroir). This wine is a great Cornas combining power and finesse.

Vinification
The harvest is destemmed at 70%. After a week of cold maceration (12 °C), fermentation starts naturally, the tanks are pumped over morning and evening and are saturated with carbon dioxide. Vinification lasts 3 to 4 weeks. -
Format: Magnum 150cl

This cuvée is meant for aging. I recommend waiting 4 or 5 years before opening the first bottles.
The best period is from 6 to 15 years, and the maximum aging is about 20 years.
