Tasting

“I love the precise balance between the southern maturity and a touch of northern freshness. Lots of aromas of well-ripened red fruits and remarkably fine tannins for this appellation make it stand out. Long, complex, and spicy finish. A cuvée of Grenache, Mourvèdre, and Syrah. From grapes grown biodynamically and certified Demeter. To be enjoyed or kept.” (James Suckling 2023)

Aromas : Powerful and intense, black fruits (blackberries, blueberries) and spices (licorice)

Palate : Fleshy and generous, moderately structured, silky tannins, nice length, fruity finish with scents of garrigue

Food and wine pairings

Braised lamb with sage, Bouillabaisse, Herb-crusted rack of lamb, French cuisine, Soft cheese, Grilled duck breast, Lamb navarin, Stew, Chicken liver salad with raspberry vinegar, Game pie, Niçoise tripe, Red mullet with olives.
