About the cuvée

Located under the Virgin "Notre Dame de Bonne Espérance" which overlooks Pernand, our estate also vinifies a new Premier Cru white named "Sous Frétille".

The name Pernand may come from the Gaulish nanto "stream, valley" preceded either by the Latin base petra "stone" or the Gaulish petru "four". Pernand could then be the village of the four valleys, the village located at the crossroads of paths or four milestones (about 6 km) from Beaune.

Frétille is the hill at 385m where our beautiful village is located. Its name comes from the Frankish first "faîte", whose medieval form freste gave rise to the derivative frétille.

The vines are located fifty meters higher than the Clos du Village. We find the same south-facing exposure there. However, the slopes are steeper, and the soil is poorer: 40 cm of soil followed by white marl and limestone.

White vinification : we harvest the grapes in small crates to keep them intact, and the pressing is done with a pneumatic press that is more respectful of the grapes. Whole grapes are placed in the press, and the pressing lasts two hours. After a 24-hour settling at low temperatures, the grape juice is placed in barrels for fermentation, with 30% of new barrels. The aging on lees with bâtonnage lasts until July, and bottling is done after 12 months of aging.

Chardonnay draws its finesse and elegance while maintaining an incomparable minerality. The Premier Cru "sous Frétille" is a wine for aging; its power will only be tamed after two years. However, the most patient will find the aromas of roasted almonds and flint after five to seven years of aging. It pairs well with civets of langoustines, fish in papillotes, white meats, and very fragrant cheeses (munster, fruity comté, etc.)

About the estate

Located between Côte de Nuits and Côte de Beaune, in Pernand-Vergelesses, Burgundy, the Rapet estate produces great wines situated around the prestigious hill of Corton.

This label created by the Ministry of Agriculture and Food in 2012 certifies agricultural operations with an environmental approach. This means practicing agriculture that is more respectful of the environment around us by adhering to a very rigorous specification.

This certification includes 3 levels of requirements. Our estate obtained validation of the highest level on March 1, 2018, thus we committed to meeting 3 essential aspects:

At the level of biodiversity, we conducted an assessment of our farm listing all elements that promote the diversity of fauna and flora (hedges, woods, walls, grassy strips, trees, flowers, insects, etc.).

We have also sought to optimize fertilization management by analyzing each vineyard plot to provide exactly the amendment it needs. This has allowed us to reduce our fertilizer input by 50% in 2018.

Rationalizing plant protection is the third and final aspect of this certification. We adapt each plant protection product according to the target in order to reduce their use.
