Tasting

"An exceptional wine. The color is a beautiful deep ruby red, with all the brightness of great Burgundy. The nose is both intense and fresh for young wines. The primary notes of red fruits dominate: blackberries, sour cherries, raspberries. Complexity emerges with smoky nuances, evolving towards licorice. With maturity, a hint of pepper and a note of brown tobacco, very refined, aromas of humus and undergrowth. On the palate, a clear, precise, fleshy attack. Firmness without harshness, density without heaviness. A great freshness for young wines. With age, the wine rounds out and gains richness and relief, with a silky texture provided by the tannins. It is lively and very noble. A sensation of fullness and balance, with all the character of the tannins."

  • Situation: at the extreme south of the Beaune appellation area, bordering Pommard. A plot on a gentle slope, oriented east/southeast. 14 hectares, the largest plot of this cru, divided equally between red and white.

  • Planting density: from 10,000 to 12,500 vines/ha to explore deeply the intimacy of our terroirs and reduce production per vine.
  • Yields: we aim for the old base yield, which is the current authorized yield minus 20%.

  • Harvest: manual harvesting in small perforated crates to preserve the integrity of the fruit.

  • Sorting: at the vineyard and in the winery if necessary.

    Maceration: 2 to 3 weeks of maceration and total vinification.

History of the cuvée & tradition

The name comes from the fact that this sunny clos housed beehives, and the bees were once called "honey flies". It is one of the very first vineyards acquired by Maurice Drouhin (the founder's son) during the 1920s. With great determination, he managed to buy 41 different plots from 8 different owners. Clos des Mouches is planted in red and white, in equal parts, and produces one of the mythical wines of the House.

With 80 hectares, the Domaine Joseph Drouhin is one of the largest in the region. It is spread across all of Burgundy: Chablis (38 hectares), Côte de Nuits and Côte de Beaune (38.5 hectares), Côte Chalonnaise (3.5 hectares), and includes a majority of Grands Crus and Premiers Crus, planted with the two Burgundy grape varieties: Pinot Noir and Chardonnay.

The Domaine has been built over time through judicious acquisitions and family agreements. Some plots are among the most famous crus of Burgundy, such as Clos des Mouches, Montrachet Marquis de Laguiche, Musigny, Clos de Vougeot, or Corton-Charlemagne, etc.

For certain communal and regional appellations, Joseph Drouhin supplements its supply from long-standing partner winegrowers who share its standards.

Starting from the 2008 vintage, in order to express its attachment to this historic terroir, the designation "Vaudon" is now associated with Joseph Drouhin for all of its Chablis wines.

The Moulin de Vaudon, owned by Joseph Drouhin, is an old watermill from the 18th century, located just steps away from the Grands Crus of Chablis, spanning the Serein, an emblematic river that runs through the town of Chablis and its vineyard. It is the historical seat of the Domaine and constitutes an exceptional place within its 38 ha Chablis vineyard.
