About the estate

The Domaine aux Moines is located in France in the charming little village of Savennières in the Loire Valley, south of Angers, at the top of the prestigious hillside of Roche aux Moines, on the right bank of the Loire.

The entire vineyard is located all around the house.

A part of the vines is within the walled park itself, adjacent to the trees and fruit trees, as well as agroforestry is at the heart of the estate.

The 12 hectares benefit from a microclimate and an ideal south/southwest exposure for optimal development of Chenin, the unique grape variety at the origin of the wines of the appellation. Savennières Roche aux Moines.

The soils are composed of schist, sandstone, purple, green-gray, and rhyolite.

The vines are cultivated in organic farming, with biodynamic practices.

All decisions are made based on numerous reflections and observations,

in respect of the environment and biodiversity.

Nothing is done systematically.

The vine is worked in a spirit of durability and of quality.

The estate ensures its sustainability by gradually renewing itself, thanks to new plantings.

Great importance is given to the life of the soil and the vineyard.

The Chenin is hand-harvested in boxes, this method allows for a healthy harvest upon arrival at the cellar.

A more than rigorous sorting is done in the vineyard, only the perfect berries arrive at the winery.

The grapes are then poured into a pneumatic press for controlled and delicate pressing.

The obtained musts are thus of high quality.

The musts are placed in stainless steel tanks and then a large part of the harvest will undergo alcoholic fermentation. and its élevage in barrels and large casks.

After 18 months of élevage and a lot of attention and love, the final blend will be bottled and labeled at the estate.
