About the estate
Château d’Esclans comes from the estate's vineyards, predominantly planted with Grenache and Rolle – bringing together our elitist practices: fermentation in stainless steel tanks and aging in barrels. A unique osmosis of freshness and complexity: it presents a rich and creamy texture, infinitely long.
WHISPERING ANGEL, FROM GRAPE TO BOTTLE
The wine made from grapes sourced from the most renowned vineyards of the Esclans valley. The harvest is done at night to avoid the heat of the day. Once received, the grapes are hand-sorted and precisely evaluated by an optical sorting machine to ensure and maintain quality.
100 % FERMENTATION IN STAINLESS STEEL TANKS
A blend of the best drop and press juices, fermented separately in stainless steel tanks, always with perfect temperature control. A maturation on fine lees in stainless steel tanks for three to six months, with regular stirring.
At Château d'Esclans, the harvest takes place in September, from dawn until noon, before the heat peaks. The grapes are selected when ripe, harvested, and carefully placed in small crates (10 kg) to avoid stacking and crushing of the berries. The grapes intended for Caves d'Esclans, Whispering Angel, and in large proportions for Rock Angel are also harvested mechanically during the night, always to escape the daytime heat.
SORTING
Once in the cellars, the grapes undergo a manual sorting. All the berries selected for winemaking are perfectly destemmed and meet the strict specifications established by the winemaker (shape, size, color, and sanitary condition). A selection refined by optical sorting that discards berries that do not meet the required criteria.
COOLING AND PRESSING
The grapes are transferred for a light crushing that simply bursts the berries. A juice release procedure that allows the musts to pass through a heat exchanger to lower the temperature to 7 or 8 °C. This reduction ensures freshness and 'crunchiness' of the fruit, to which we are viscerally attached. The grapes are then ready to enter the pressing circuit, entirely under nitrogen, an essential protection against oxidation. Three different juices are obtained: free-run juice, the most important, press heart, and press tail. All these operations are crucial in determining the quality of the final product and are subject to a scrupulously detailed and controlled schedule.
BARRELS AND TANKS
Following pressing, the winemaker directs the juices according to their quality; some will be fermented in tanks, others in barrels. The different qualities are linked to the maceration time. The winemaker always seeks the least tannic juices to create soft wines that meet demanding criteria. The most important: the pale color, essential for our rosés.
THE LABORATORY
Tests and analyses are conducted throughout the winemaking processes, starting from the search for the right maturity of the berries. The juices from the different barrels and tanks are selected and presented in half-bottles. The technical team tastes the samples and determines which will make up the new vintage. The information generated during this stage is compiled and will serve as the basis for the Blending.
BLENDING
Then comes the delicate stage of blending the wines of Château d'Esclans and Caves d'Esclans. The information compiled by the technical team is taken into account by the technical director and the cellar master who, together, make a final choice of the selected batches. There are very few variations from one year to another, but each vintage is crafted from a grape variety or different percentages of grape varieties. The final blend evolves while offering the same taste framework.
