About the cuvée
Fleur de Passion is the flagship of the Diebolt-Vallois house. Crafted and aged in barrels, this vintage cuvée is only made in the best years.

Grape variety : 100% Chardonnay, Blanc de Blancs
Terroir : The grapes come from 7 to 8 plots of old hillside vines located in Cramant (a village classified as Grand Cru at 100%), particularly in the lieu-dit Les Buzons. Many vines are 60 years old or more. The yields are low. The soils consist of a thin layer of earth on a chalk bedrock, with a general southeast exposure.
Vinification : Alcoholic fermentation is carried out in barrels. No malolactic fermentation, no filtration, no fining: everything that can tire the wine is avoided in order to keep the full expression of the terroir. Aging in Burgundy barrels of a wine. It is a champagne made "in the old-fashioned way."
Dosage : 3 to 5 gr/liter
Service : 9°C in summer, 10-11°C in winter

About the estate
Lthe champagne house Diebolt-Vallois is located in Cramant, a village in the Côte des Blancs where the chalky soil provides an ideal cradle for the chardonnay grape. It is undoubtedly one of the most beautiful terroirs of Champagne, the kingdom of white champagnes.
Lthe champagnes Diebolt-Vallois are the work of a united family:
Jacques Diebolt and Nadia Vallois are assisted by their two children, Arnaud and Isabelle who are taking an increasingly active role in managing the estate.
Lthe Diebolt family has been established in Cramant since the end of the 19th century and the Vallois family has been cultivating vines in Cuis since the 15th century. While Jacques Diebolt started with his grandfather, it was only from 1978 that the Diebolt-Vallois house began to grow with the expansion of the estate and the construction of a cellar and then an operational building.
